Cocoa nibs are the very essence of a cocoa bean. After roasting, the whole beans are chopped into pieces, sifted carefully to get all the shells removed so that to obtain the purest and most delicious product: Callebaut® cocoa nibs. Their incredible toasted cocoa flavor and crunch make them a great choice for texturing your desserts or savory dishes.
Sprinkle the nibs over freshly dipped or glazed pastries for an extremely rich cocoa flavor. If you add finely ground cocoa nibs to the caramel, you will get an impeccable nougatine. Alternatively, you can mix them with your chocolate-nut praline or gianduja for extra flavor and amazing texture.
The nibs can also be added to rolls, cookies, cakes as well as sprinkled over desserts, ice creams, and à la minute drinks for a delicious and crunchy hint.
We recommend not mixing them with creamy bases and ganache as cocoa nibs absorb moisture and may become soggy.
