Spätzle, rich in fresh eggs and flavours, are part of Alsatian gastronomy and are traditionally browned in butter and served as an accompaniment to game on festive days. Their original shape, thick and rough, also lends itself to all sorts of culinary creations. On a daily basis, we particularly like them fried in a pan with mushrooms and in a gratin.
